Dill is an annual herb indigenous to Central Asia, with widespread cultivation in Europe and Northern Africa for both culinary and medicinal purposes. The dried leaves of the same plant, known as dill weed, are also employed as a flavoring agent, offering a milder taste compared to dill seed. The origin of dill seeds can be traced back to Central Asia, though they are extensively cultivated in Egypt and Mediterranean regions, as well as Eastern Europe. Notably, dill is gaining popularity in North America. Its related species, Sowa, is cultivated in India, featuring larger fruits but with a less pronounced fragrance.
Major dill production areas include India and Pakistan, with Egypt, Fiji, Mexico, the Netherlands, the United States, England, and Hungary also contributing to global production, albeit to a lesser extent.
India stands out as the primary producer of dill seed and its derivatives, witnessing growth in exports of essential oil and seeds over the past five years. India is a key supplier of whole and powdered spice to various European countries.
